Meal Plan: May 2-10, 2014

This week doesn’t have as many meals as it could, due to a death in the family and a trip back to New England for three days. It’s supposed to be hot here in Charleston this coming week, so I’m a little concerned about all the soup and hot food. If it’s still hot next week, I’m hoping to throw together some cold food: pasta salad, sandwiches, and the like.

I’ve never been a fan of cold soup that isn’t fruit soup… but maybe you didn’t need to know that.


Saturday and Sunday

Roasted Zucchini Soup


Monday and Tuesday

Rice and Beans with Avocado


Wednesday and Thursday

Sopa de Ajo (Castillian Garlic and Bread Soup), and salad


Friday, Saturday and Sunday

Travel to New England for a memorial service, no meals planned.
