Meal Plan: July 19 – 25, 2014

This week, an experiment to see how far we can stretch a single recipe. When I was in college, rice and beans was the ultimate feed-a-lot-of-people on a budget meal. Both principal ingredients are cheap, and so are the mix-ins like salsa, hot sauce, sautéed onions and green peppers. Sure, sure, you can go all out and get ham hocks and cook up Creole style New Orleans red beans and rice (another time, surely), but why not keep it simple on a weeknight?
